Christmas Eve Dinner

Although this post is a little late, I feel like it's never too late to brag about yourself so ... here it goes!

A few weeks ago I was reading through the "Christmas Eve Dinner" section of the Pioneer Woman's new cookbook (which is AWESOME, by the way) and noticed that she had a gorgeous prime rib as her main course. Fairly certain I'd never had prime rib before I asked Ben his thoughts. Of course he was all for it. Then I dropped the price. I read online that a prime rib roast is usually 9.99/lb so if we were doing this he had to be in it with me.

It turns out that when good meat is involved, Ben can usually look past the price, which is pretty impressive if you know Ben at all.

I looked around a few stores and the smallest roast I could find was a "puny" 3 lbs. and it was selling slightly cheaper than expected so we were sold!

Anyway, Christmas Eve rolled around and it was time to get to work. I was a bit terrified, especially since the last meat I'd attempted to make for us turned out dry and tough and it took a hacksaw to cut it. Luckily, I had the Pioneer Woman and the internet to help me through this adventure. And boy did it work!

  
We also served up some traditional Yorkshire pudding which, as far as I can tell, is like a muffin/roll form of a German pancake. 



It was seriously perfect. I could not have imagined a better tasting cut of meat, or a meal for that matter.


Mmm.

And the best part is, Ben approved!

Dude! We had prime rib too! Your looks amazing. I understand the hesitation around meat. Micah does all the meat cooking in this house. I am way too scared to mess with such a costly hunk of cow. You go girl!

Looks yum! Yes, Yorkshire pudding is a rising egg bread a lot like German pancake but savory not sweet. Here they cook them in little round dishes and they end up looking like little cups and you fill them with gravy.
